Monday Night Salmon Bowls

These have become a staple in our home. It feels good to know I am starting the week off with healthy fish (or rotisserie chicken) and veggies. It is super easy to make adjustments based on individual tastes and what you happen to have in the fridge. I am excited for you to see if this makes the monthly calendar for your family!

Base of bowl-you choose! Rice, quinoa, cauliflower rice, or other blend of grains.

Black beans-Seasoned black beans. Heat in a saucepan.

Veggies! Choose whatever veggies you have on hand or are a hit for your family! We like red and yellow peppers and yellow onion in this particular bowl. Sauté with olive oil, salt, and pepper until tender. Juice from a lemon is a great addition.

Salmon-The BEST salmon! Easy and simple and a crowd pleaser! I originally got this recipe from Pioneer Woman, The Perfect Salmon, as she calls it. And I agree!

Line your sheet pan with foil. Place your salmon filets on foil and drizzle with olive oil. Use ground salt and pepper to generously coat the filets. I use a lot of pepper.

Put the sheet pan in a cold oven and set the temperature to 425 degrees and set your timer for 22 minutes. Perfect!

Assemble your bowls! Start with your base, add black beans, veggies, and salmon filet. Top with your favorite crumbled cheese (feta, goat cheese) and drizzle your favorite sauce. Bitchin Sauce, any flavor, and Valentina Salsa Picante are staples in our home! Make it yours!
